The brownie box says mix 50 times. After 5 minutes of mixing I asked him if we're ready to bake, and this baker said no. Apparently a good brownie needs more than 50 times of mixing, so more mixing it is.

One needs to check for batter consistency too, because we all know that is important.

And it doesn't matter how messy you get if you want the perfect brownie.

20 mins later, the baker says we're done. I suppose this is how he knows if the batter is ready.
The brownies were delicious. His method is just as good after all.
